Light Leafy Green #juice #recipe

This spring, I started experimenting with juicing different kinds of greens when I ran out of spinach in the fridge. We had a sweet baby green mix of romaine, red oak, green oak, tango, lolla rossa, red leaf, red romaine and green leaf. With just a few handfuls, and some yummy fruits, I created this recipe.

2 apples
1 pear
1 nectarine or peach
3 handfuls of mixed greens

Start by juicing a handful of your greens, followed by chunks of apple and pear. Always follow a leafy or soft ingredient with a harder one to make sure that everything is being pushed through the sieve.

Push your stone fruit through, and then end with apple and pear pieces.

So my juicing experience yesterday was one that I knew was coming, but I hadn't prepared myself for.

My juice turned green.

I knew it was going to happen, and was sort of interested to find out just what juicing baby spinach would be like, but when I started putting it through the juicer...I started freaking out.

I had to drink that?! And drink it, I did! I was really pleasantly surprised at the smooth texture and the sweetness of the juice. I didn't feel like I was drinking a garden at all, though the ingredients reminded me of Peter

2 apples
2 cups baby carrots
2 cups baby spinach

After reading the prep tips on Joe Cross' website, I started with my spinach to make sure that everything would get pushed through the juicer. Then half of an apple, a handful of carrots..repeat repeat repeat until everything was pushed through, ending with an apple half.

Swirl to blend, then down the hatch!

This super incredibly healthy juice recipe is packed full of Vitamin A, Fiber, Iron and Beta Carotene - all awesome nutrients for a healthy pregnancy and healthy mama! And aside from coring your apples, there is very little prep with this recipe!

Morning Refresher #Juicing #recipe

Well, folks...I've taken the plunge into juicing. After watching Fat, Sick and Nearly Dead, rating juicers and considering our options, I knew that juicing would be an excellent addition to our healthy habits.

I have to say, I am really impressed with my first juice. My son loved his taste of mine so much that he asked for his own! It's such a great way to get extra nutrients into a picky eater, so here's my recipe for a nice, light juice. I wanted to start with something fruity and light, not knowing what to expect and I was pleasantly surprised. 

1 pear
1 apple
handful of strawberries (the ones I had were HUGE!)
1 cup fresh blueberries

(ahem...that's 4 servings of fruit right there!)

There is very little prep needed for this juice recipe. I rinsed everything, cored my apple, and cut around the core of my pear (not necessary according to Joe Cross' prep guide, but I wasn't sure if my juicer could handle the core, so to be on the safe side I cut the flesh away from the core)

I wasn't sure just how much juice to expect, but this recipe made about 6oz. of fresh juice. The texture was smooth, and the taste was nice and light; the perfect way to start the day.

The juicer that we have is the Cuisinart CJE-500 Compact Juice Extractor

It bit through the fruit with ease and I never felt as though I was really forcing anything through. In terms of cleanup, I had the entire machine taken apart, scrubbed and sitting to dry within 5 minutes.

For two 6oz juices, there was about 2 and a half cups of pump and skins. 

I am really excited to be adding in a juice every morning, knowing that I do not get near enough fruits and vegetables in my diet.

New Year New Me....a Confession

Have you been missing the updates? Wondering about how the journey to a healthier and more positive me is going?

Well...I hit a wall. I got emotional and I gave up.

I gave up.

Yep. Me. I gave up.

I know I know. I have accomplished so much, and I have come so far and I should be proud. So, why in the world did I feel like a sloth, and why in the world did I let the what's the point mentality take over?

I honestly am not sure. My husband started traveling, I got busy with studio work, proposals, mentorship pieces (a new facet to my business that I absolutely adore) and I found myself pulled in a tonne of different directions.

Then I got sad, and I got down on myself for being sad, which sent me into a spiral. I gave up.

Then, this week I recommitted myself.

And I recommitted myself to my little dude who watches my every move

Our City Hall will be changing the colour of its exterior lighting to teal for the duration of the day, and our community leaders will be supporting our efforts in raising awareness for early detection.

New Year New Me, Week 6

Ladies and gentlemen, the healthy weight loss challenge is back ON! I am not at 100% health just yet, but I have been working my tail off to eat clean, snack smart and train to the best of my ability with Insanity, while listening to my body.

How am I feeling? Well...I am having a hard time getting through a workout right now without wheezing since I have been sick for the past week and a half, but at the end...holy endorphin rush. I have to say, the sense of achievement...the rush that I just kicked butt and even if I'm on the floor in a pile of sweat...I did it. It feels absolutely amazing and I am so much happier after I've done an Insanity circuit.

Insanity is hard. Eating clean {as clean as I can, while still allowing myself to have certain things here and there....I wouldn't be working this hard if I wasn't allowing myself a chunk of chocolate here and there!} is hard. But how I feel is awesome!
Week 1 Wednesday Challenge - planks
Yesterday, I met with Kristine Cook to finalize all of my clothes for BlogHer, and as soon as she saw me she said that we were going to have to remeasure and asked if I've had to go out get all new clothes. Do you know how great it is to see someone and have them notice your body changes immediately? Again...I feel awesome! It validates all of this hard work and shows me that it's not just me seeing these changes, it's the whole darn world!

  My Beachbody Coach, Dara, shared with me an awesome app this week that you can use on your iPhone and it will take timed photos. Yay! Now I can share actual realtime photos of my working out with TimerCam and doing the moves!

She has also started a weekly Wednesday fitness challenge in my Facebook motivation and accountability group - this week was planks. Oh how I love me some planks! They're difficult {especially after having a baby!} but they are SO rewarding! Follow me on Instagram and get in on the challenges every week!

New Year New Me...Week Off

It's been a full week now since I've worked out and done an Insanity circuit. Between taking care of a very sick toddler over the weekend, and doing what I can to help my Husband mend from his chest cold, it was only a matter of time before I too got sick.

I've really been listening to my body, and have given myself a break. Do I feel bad? No. What good would it be to push myself through a 59 minute Insanity interval, when I can barely catch my breath after blowing my nose?


I have, however, kept drinking my Shakeology and it has really been helping me to have more energy in having to chase around a toddler while sick, and kept a full blown flu at bay.

Seriously, the stuff is that good for you. I choose to have it as my first meal of the day. My favourite is to mix it up in the blender with water, almond milk and some frozen strawberries. It makes me feel good about what I am putting into my body, which sets me up for making healthier food choices throughout the rest of the day.

It also promotes healthy weight loss, and I found it interesting that while I haven't done Insanity in a week now, I still have lost another 2lbs. New Year, New Me...Week 2!

So how did Week 2 of the Beachbody challenge go?

Well, I can absolutely say that I have seen huge changes in my body. The top left photo is a comparison of week 1 and week 2. The inches are coming off and I am so much stronger already!

What I learned....I've learned that I don't always have to keep up with everyone on the workout. This is about my limits and my boundaries, and me pushing them. I've learned that I love working out in my yoga tights and a sports bra {never ever ever thought I'd say that!} and I've learned that I need new bras and underwear as mine are TOO BIG!

I've also learned that I love the Heisman, football drills, sprints, hurdle jumps and still really hate burpees. I'm not sure that I will ever love them. And I learned on Day15 that I have made some serious progress in terms of my strength, speed and overall cardio health.

My proudest moments over the past week were getting through Plyometric Cardio without tears (see b/w photo of me smiling in the first collage) and having Owen run up to me after a workout yelling "Good Job, Mommy!" It also felt pretty darn good to be complimented and hear the words "thin", "lost alot of weight", "you look great" and "hello, skinny Shannon!"

I know that I still have alot of work to do, and it's only Day 15 of Insanity as I write this. I know that I will have some challenges ahead - like facing the scale and it's dirty mind tricks (even though there is a drop in weight -3lbs since Christmas) - but I also know what I see in the mirror, and what I feel in my heart; positive change.

I also started on Tuesday with Shakeology, which I will be having each and every morning as breakfast for the next 30 days, and the incorporating into my daily routine to remain healthy, get the proper nutrition to set up for an excellent day, and curb the cravings that have plagued me for most of my life {hello, chocolate and bread! I'm talking to you!}

I also have learned that even with the amount of determination and motivation that I have, I still fall every now and then, and my emotions can get the best of me. This is when having a coach like Dara is so important. I am so thankful to be able to send her a quick message saying Ok, so I don't feel so great about myself today and for her to remind me just why I am doing this, and how much I have accomplished in just two short weeks.

Next week, I'm going to experiment with some Shakeology recipes and test the waters to see what I like. So far, it's a such rich and yummy chocolate shake that I absolutely love starting the day with - it's seriously like having a milkshake and getting a chocolate fix all at once. My craving is satisfied, and I know that I'm putting incredible ingredients into my body to help fuel it for a busy day. Stay tuned!! SWH4T$: Strawberry Lentil Cookies

As a busy mom, with a somewhat picky toddler, I need easy and quick ways to ensure that he's getting the protein and nutrients that he needs to be the ever-ready bunny that he is.

I knew that I had a bag of lentils in the cupboard, so I cooked up a batch (I think 1/2 a cup of dry lentils...wowzah do they make alot!).

Now...if you haven't cooked with lentils before...they're not the most appetizing in colour, smell of really flavour. In soup? sure. Alone...kinda gross.

Then I had a thought...what if I mixed them with fruit, and pureed them down into a sauce? Would he eat them then?

You betcha...when they were made into Strawberry Lentil Oatmeal Cookies! The best part: thay just taste like strawberry oatmeal cookies! You can't even tell that the lentils are in there! Sneaky...and smart!

1 tsp. baking powder
   1/4 tsp. salt
  1/2 c. butter
  1/2 c. sugar
  2 egg whites
  2 c. rolled oats (I had large flake on hand, so that's what I used)
  2 c. all purpose flour
  1 c. strawberry lentil puree

Preheat oven to 375 degrees. Mix dry ingredients, then add and mix the wet ingredients. If you have a cookie scoop, I recommend using it so that your cookies turn out evenly and lovely.

Bake for 11mins.

I found that this made a decent amount of cookies, about 5 dozen so I wrapped them in plastic wrap and popped them in the freezer so I could take them out and have {healthy} cookies on hand whenever needed.

Energy Bites

I saw these a few weeks ago on Pinterest, and since I really love to make our own treats and ensure that we're eating wholesome goodies, decided to whip up my own version!

  • 1 1/2 cup (dry) oatmeal (I used old-fashioned oats)
  • 1 cup chopped peanuts
  • 1/2 cup chocolate chips
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1 tsp. vanilla

It couldn't be easier to make these energy bites! Literally put everything in a bowl, mix it really well, and then chill for 30 minutes. Roll into balls. I rolled these ones about 1", but definitely could have gone bigger given that my Hubs and kiddo were gobbling them up two or three at a time.

Then put into a plastic container with lid (rubbermaid...whatever), and use wax paper between the layers so that the bites don't stick together. Toss them in the fridge for about 30mins

Makes about 20-25, depending on size

Easy peasy, and the toddler LOVES them!

Easy Toddler Breakfast

Today's post isn't so much about saving money and time (though this is a super frugal and fast breakfast to make any day of the week) as it is about saving your sanity.

Like most other 20month olds, my son has become a veggie-free-zone. Put steamed or roasted veggies on his tray and he looks at you like you have three heads.

Put berries, carrots or bananas in pancakes, and he's your man! He'll gobble it up! Well...until recently when even that form of trickery stopped working.

Then I found this recipe on Pinterest...and man oh man!

What you need:
1/4 cup oatmeal (recipe calls for instant oats, but I used rolled oats)
1 egg
a small handful of whatever fruit you'd like to add in...or veggies! That'd work too! I used blackberries and raspberries

Mix everything together in a microwave safe coffee mug, then microwave on medium high for 1 minute. If it's not firm enough and the egg is still runny, put it back in for 30 seconds.

Chop into big chunks and serve warm!

WAHM Wednesday...Brown Eyed {Artsy} Girl

Last week, the lovely Meira from contacted me about doing a sponsor post and it got me thinking…eyes are pretty darn important in this whole being an artist thing! Off I went to their website, which is fantastic and so user friendly by the way, in search of new glasses.

Typically, I wear contacts, but when I’m working for hours upon hours on a project, my eyes need a break. And being a painter, bit of a nerdy-girl, and very much a hippie-mama, I was immediately drawn to the selection of vintage and nerdy inspired eyeglasses in the Women’s Retro Frames section.

Currently, I sport a pair of purple frames that I’ve had since I was in grade 10…a whopping fourteen years ago. Time for a change! I was impressed to see not only a wide selection in terms of colours, but also in shape. The price was incredible too! The pair of glasses that I was drawn toward burgundy, and only $48! Including the lenses! Amazing!!

I’ve always been traditional, getting my glasses from my Optometrists’ office, and never considered online eyeglasses…until now. The frames aren’t your everyday frames either. They’re quality frames and lenses, like you’d get in the physical office, and are stylish and up to date with current trends.

I’ve also always had trouble finding a pair of glasses that reflects who I am, mama and artist, that also fits with my super strained eyesight. I’m a -4.25 in my right, and a -6.00 in my left. No idea on Cylinder or Axis, which means I probably need to get my eyes tested relatively soon, but I know that I’ve always been limited in my options since my left lense tends to be rather thick.

Limited no more! Thanks to I can be the funky-fresh mama that I am, and still be able to focus on my artwork, without breaking the bank now that I know I can buy glasses online!




Talk-To-Me Tuesday: Carrot Pancakes

Lately, I've been wracking my brain about how to get more veggies into my son. He simply just will not eat them...unless they're sweet potato fries.

So...being creative, I wondered if he'd mind carrots grated into his pancakes. Boy oh boy! Did we have a winner here!!

  • 1
    cup all-purpose flour
  • 1
    tablespoon sugar
  • 2
    teaspoons baking powder
  • 1/4
    teaspoon salt
  • 1
    beaten egg
  • 1
    cup milk
  • 2
    tablespoons cooking oil
  • 3 large carrots, grated (about 1/2 to 3/4 cup)
Preheat skillet, griddle, frying pan...whatever your cooking method.

Combine dry ingredients in a bowl. Beat egg with milk and cooking oil, then stir into dry ingredients until combined and not lumpy. Make sure to not overmix.

Mix in carrots.

Cook on your griddle, turning when bubbles pop and don't fill back in.

Serve! I served mine plain, no syrup required!

Yield is about 8-10 pancakes, and they freeze really well in a Ziploc bag! To reheat, simply pop in the toaster!

How-To Tuesday: Monster Meatballs

I was in search for a meatball recipe that was healthy, yummy, and wholesome for my son, and when I found a tonne of different variations, I decided to make one of my own!

He's had them about twice now and absolutely LOVES them!

Monster Meatballs

Preheat Oven to 400F

2lb lean ground bee1 cup oatmeal

1/2cup whole milk

1 1/2 tsp dried oregano

1 1/2 tsp dried basil

1 tsp onion powder

1 tsp garlic powder

1 tsp fine black pepper

1 egg

Line baking sheets with parchment paper

In a large bowl, combine oatmeal and whole milk. Toss in beef, herbs, spices and egg. Get your hands in there and mix everything together.

Roll meatballs so they are about the size of a rounded teaspoon

Place on cookie sheets, then bake for 12 minutes.

Let cool, then put in Ziploc baggies and put in freezer

Yield: 151 meatballs (or 50-73 portions {of 2-3 meatballs, cut into quarters after reheated})

And yes...they're yummy for adults too!

How-To Tuesday: Healthy Granola Bars

Good morning everyone! Well...YouTube is being incredibly slow lately, so How-To videos are on hold a bit. Today's How-To was going to take approximately 376 minutes to upload, and failed plenty of times to make me want to give up. However, the recipe is just TOO good not to share with you all! I made these granola bars two weeks ago before my crazy insane week with the 3tier cake began, and they were a lifesaver! For all of you busy moms, they make a perfect (and super healthy) breakfast or snack. For you moms with young children, they are perfect to get your kiddos to help in the kitchen! For moms with toddlers who are experienced with finger foods, chop them into sticks and they make a yummy and healthy snack (wait until 12mo+ though, as they have honey in them) Healthy Granola Bars Preheat oven to 350F Mash 3 ripe bananas in a large bowl Mix in: 2 cups trail mix (I used 1/2 cup coconut, 1 cup sunflower seeds, 1/2 toasted almonds. Use your favourites!) 2 cups rolled oats (or steel oats for added nutritional value!) 1 egg 2 tbsp honey (I used Clovermead...if you're in the SWOntario area, stop by! They're amazing!) Optional: 1/3 cup chocolate chips (I didn't put them in mine, but it'd be oh-so-yummy with them!) Mix everything together really well, then press into a 12x9 greased (or parchment lined) bar pan. Bake for 15-20 minutes or until edges are golden brown and crispy (I baked for about 25mins) Cool, and cut into bars! They're super tasty frozen, and make for a really great breakfast on the go! Try adding pumpkin seeds, soy nuts, sesame seeds or cranberries for added yumminess!
