Cookies and Creme Cheesecakes
1pkg of Oreo cookies
2lbs of cream cheese (for a healthy version, select fat free!)
1 cup of sugar
1 tsp of vanilla (I made these without it because we didn't have any on vacation, and they tasted delish!)
4 large eggs, room temp and beaten
1 cup of sour cream (again...fat free!)
pinch of salt
Preheat over to 275F and line muffin tins with paper liners. Place 1 Oreo at the bottom of each lined cup.
Mix with an electric mixer: cream cheese, sugar, and vanilla
Drizzle in eggs, beating to combine. Beat in sour cream and salt. Crumble in Oreo cookies.
Divide batter evenly among cookie-filled cups, filling almost to the top.
Bake until set, about 22 minutes (mine took about 30minutes to set).
Cool on a wire rack, and refrigerate in tine for at least 4 hours (or overnight if you can).
Top with a Treat Flag and serve on a lovely cake stand!
